Sweet Potato Pie

8 Sweet potatoes, peeled

6 ounces Whole milk

4 Eggs, whole

4 ounces Granulated sugar

1 tablespoon Powered cinnamon

1 teaspoon Ground nutmeg

1 ounce Vanilla extract

6 ounces Butter, softened

10 Graham cracker tartlets

Method of Preparation

Boil the potatoes until al dente then drain. Combine all the boiled potatoes with the rest of the ingredients in a mixing bowl. Whisk vigorously until smooth consistency. Pour into each tartlet and bake in the oven at 350 degrees F for 15-20 minutes.
