Angelique’s Carrot Cake

Ingredients

Carrot Cake: 

2 ½ cup All-purpose flour

2 cup Sugar

2 tablespoon Cocoa powder

1 teaspoon Salt

1 teaspoon Baking powder

2 tablespoon Baking soda

1 teaspoon Cinnamon

1 teaspoon Nutmeg

¼ teaspoon Clove

¼ teaspoon Allspice

4 Eggs

2 cup Carrot, grated

8 ½ ounces Crushed pineapple

1 ½ cup Vegetable oil

1 cup Walnuts, chopped

Cream Cheese Frosting:

1 pound Cream cheese

4 pounds Powdered Sugar

8 ounces Butter

1 teaspoon Vanilla

Pinch of salt

Method of Preparation

Carrot Cake: Mix dry ingredients together. Add beaten eggs, carrots, pineapple with juice and oil. Mix with wooden spoon. Bake at 350 degrees F for 50 to 60 minutes.

Cream Cheese Frosting: Blend all ingredients with mixer. If too dry, add milk.
