Miami brings the fruits of the sea tableside

This month for Food is Art, we step into the lush sanctuary of Sonesta Coconut Grove where you’ll feel the peace of the blue Biscayne Bay wash over you like a warm breeze. Located in a private expanse on the 8th floor with incredible views of the bay, it’s only fitting that the award winning dining experience goes by the name Panorama. Memorable in every way, from the artsy Peruvian-inspired culinary creations to the indoor-outdoor ambiance enveloped by views of the bay at every turn. And at the center of it all is our very own Executive Chef Christopher Cramer.

Trio of Causas

Named Executive Chef of Sonesta Coconut Grove Miami in 2004, Chef Cramer overseas every aspect of the dining experience, from fine dining to beverages to room service. A graduate of Johnson & Wales, Chef Cramer studied extensively in Peru, the driving inspiration behind Panorama’s innovative Nuevo-Andean Peruvian cuisine. Immersing himself in the ancient land of the Inca Empire, he soaked in the culinary traditions and blending of rich native cultures ancient and new. Working alongside many of that country’s most celebrated chefs, he’s brought his vision of bold Peruvian with a touch of contemporary to delight guests.  Under his guidence, Panorama has won 5 consecutive awards in the Annual Great Taste of the Grove contest.

This month Chef Cramer celebrates the fruits of the sea with locally-inspired flavors. Try Chef Cramer’s ceviche recipe to create your own at home in honor of National Seafood Month.
