To put it modestly, Royal Sonesta Harbor Court Baltimore has been experiencing a few changes, from the dining room to the kitchen. We’re thrilled to welcome William Reed, our new Executive Chef for the hotel. A native of Baltimore, William hails earned a professional cooking and baking degree at Baltimore International College for the Culinary Arts in 1998. Since, he has done it all in the restaurant industry, from working as sous chef to preparing meals for 23,000 square feet of function space to creating new concepts in hotel restaurateuring. We could not be happier to invite him to bring his considerable talent to Sonesta.
In the spirit of Sonesta’s Food Is Art philosophy, William is transforming Explorers Restaurant into an amazing American gastro-pub experience. Using ingredients sourced from local farms and Maryland’s traditional fare such as crab cakes and pan-seared rockfish, he will offer a unique fusion of high-end cuisine and casual dining. The bar, too, will have a new focus on barrel-aged whiskey, using local and national whiskeys aged right on the premises.
The dining room will also be re-imagined with new drapery and carpets, new dining tables and furnishings, and enhanced lighting at the bar. We have even brought in a professional to touch up the beloved mural.
