Summer is in full swing along the Charles River, and at Royal Sonesta Boston’s ArtBar, that means delicious summer specials. We recommend booking a stay and spending a summer evening or two enjoying patio time with Boston’s best views, but if you aren’t able to visit, you can recreate some of ArtBar’s summer specials at home.
Chipotle Lobster Roll with Grilled Corn
1 ear of sugar corn
2 each 1.25 pound lobsters
2 each brioche hot dog buns
2 teaspoons chipotle aioli
2 leaves bibb lettuce
Chipotle Aioli:
½ cup mayo
1 T finely chopped chipotles in adobo sauce
1 T fresh squeeze
lime juice
Salt and Pepper to taste
Remove corn from husk and place on the grill, turning until all sides have some color and are cooked through. When cooled, remove from cob.
Cook the two lobsters in boiling water with 1 split lemon, 2 bay leaves and 1 teaspoon black peppercorns. Cook for 9 minutes and transfer to a pot of ice water to stop the cooking.
Break down the lobster and chop the meat to thick chunks. Griddle hot dog rolls and set aside. Combine lobster meat with 2 teaspoons of chipotle aioli and ½ cup of grilled corn.
Fill hot dog roll with one leaf of lettuce and divide meat evenly between both rolls.
You should have plenty of lobster for two overflowing rolls and some to snack on during the process.
