Introducing Silicon Valley’s Latest Culinary Hot Spot!

Executive Chef Adam Ornellas takes the helm at the unique Table and Bar eatery at Sonesta Silicon Valley, drawing inspiration from local agriculture and the cultures of the San Francisco Bay area. Chef Adam was born and raised in San Jose, California, so he knows how authentically the Manzanita menu captures the melting pot of Silicon Valley. With his delicious creations, he strives to convey the colorful contrasts and true flavors of the place he knows and loves. His menu features small and shareable plates that blend informal and high-quality ingredients into spicy, bold flavors—all in a casual and welcoming atmosphere.

Manzanita is named for the beautiful trees and shrubs that dot the California landscape, lending the hills and plains a unique depth of color. “We always like to be reminded that our menu keeps us close to the earth,” says Chef Adam, “like the Manzanita.” His open and inviting restaurant is evolving into a vibrant gathering place where people can slow down and connect amid the bustle of their days.

Chef Adam Brings an International Flair

A culinary artist who has cooked all over the world, Chef Adam Ornellas has been mastering the kitchen for 25 years. At Manzanita, he starts with local California ingredients, then brings his Spanish and Portuguese background and his deep respect for Asian cuisine to the table. He apprenticed with Chef Almir Da Fonseca, now an instructor at the Culinary Institute of America in St. Helena. He created unique dishes in several restaurants—and was Executive Chef for Starwood Hotels & Resorts—before he joined the Sonesta team. He credits his mother and grandfather for instilling in him a deep love for food and a respect for using simple and fresh ingredients. When he’s not in the kitchen, he enjoys drawing, swimming and playing with his children.

Crab Mango Guacamole

Executive Chef Adam Ornellas, Sonesta Silicon Valley

Ingredients:

  • 1 mango, peeled and diced
  • 3 avocados, peeled and roughly diced
  • 1 tsp granulated garlic
  • Splash of lemon juice
  • Splash of orange juice
  • ½ white onion, diced
  • 1 jalapeno, diced
  • Green onions, sliced
  • 3 tbsp fresh cilantro, chopped
  • Pinch of crushed red pepper
  • Salt and pepper to taste
  • 1 can lump crab
  • Tortilla corn chips

Preparation:

Combine all ingredients in large bowl and serve with corn tortilla chips
