It’s Restaurant Week in Explorers Restaurant & Lounge, which means that our very own Chef Lloyd Titus has been hard at work creating some spectacular dishes. The event runs from January 12th through the 21st, 11 A.M. – 10 P.M. and features delectable two course lunches and three course dinners. Whether you’re looking for the perfect place for a business lunch or a romantic dinner date, Explorers Restaurant & Lounge is the place to go.

As part of Restaurant Week, Chef Titus also taped a cooking demo that will air in the afternoon on January 19, 2017 on WMAR. Tune in to see Chef Titus in action making his own take on Chicken & Waffles, which is also one of the dishes you can enjoy when you come to Expolrers Restaurant Lounge during Restaurant Week. You are sure to be impressed by Chef Titus’ finesse and creativity in the kitchen, and after watching him in his element, you’ll be itching to try his dishes. And, if you’d like to try making one of Chef Titus’ delicious meals for yourself, here’s the recipe for his Fried Cornish Hen and Sweet Potato Waffles:


Fried Cornish Hen (one serving)


  • Half Cornish hen
  • 2 eggs
  • ½ cup flour
  • 2 tbsp. Cajun spice blend
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tbsp. granulated garlic
  • 2 tbsp. tandoori spice
  • Oil


  1. Combine all spices in a bowl
  2. Season hen with the spices
  3. Dip the hen in egg
  4. Dip the hen in flour
  5. Fry in oil that is 350 degrees

Sweet Potato Waffles (six servings)


  • 1 ½ cups sweet potato
  • ½ cup water
  • 6 eggs
  • 2 cups waffle mix
  • 2 cups butter
  • 2 tsp. baking soda
  • 3 tsp. cinnamon


  1. Bake sweet potato until fully tender and let cool
  2. Remove skin from sweet potatoes
  3. Combine water, eggs, and sweet potatoes in a bowl
  4. Combine the waffle mix, baking soda, and cinnamon in a separate bowl
  5. Combine the wet and dry ingredients
  6. Add the butter and mix until combined
  7. Spray and heat waffle iron, scoop prepared mix into the iron, and cook
